I am finally cooking again. The house is mostly done, I have a few things I should be doing, but for now we just have to maintain a clean look, which can be really hard with kiddos. So, I made dinner for some friends this weekend. A young guy that Dwayne and I have mentored for years is getting married next month, so he and his bride to be came over for dinner on Friday. A quick meal of enchiladas for them with Sari's famous Rice Krispie bars...who can go wrong. It was nice to hang out with them, even though I was so tired, because I had been at Mindy's house all day doing a rummage sale with her. I loved being at someone else's house for a whole day, and it was really nice chatting with Mindy.
Saturday...Angel Food...waking up at 5:30am, waking up Brighton and Dora at 5:30am, heading down to the church to do a little volunteer work. Sari got up around 6:30am to start the rummage sale at our house. The kiddos and I get home around 8am to help Sari out. After spending a cold morning sitting outside with the rummage sale, I head into the kitchen to start my "Thank You" dinner for Matt and Patty. Patty did an awesome job of taking care of my kitties while we were in Texas for spring break and I was just now getting around to fixing her dinner. I had the menu all planned, had all my recipes in order, but one. I knew what dessert I wanted, but I could not find the recipe anywhere...I searched all my favorite sites and could not find it. So, I finally called my mom and she emailed it to me. It is an easy, fabulous cake. It was a fun night. On Sunday we had lots of leftovers....including this wonderful cake....
